Photos: Summer grilling with Kristian Niemi
“We are here to grill steaks today,” explained local restaurateur Kristian Niemi last night at City Roots Farm, “The reason we are having this class and the reason I started teaching this class: I’ve gone over to too many people's houses and had shitty steaks.”
Niemi, known previously for his roles at Mr. Friendly’s and Rosso Trattoria, currently with Bourbon and the Great American Whiskey Fair and in the future with Black Rooster, a “Frenchish” West Columbia restaurant with a rooftop bar overlooking the river and city, continued, “I had to stand there quietly, 'you know, hey, they invited me over, I think I should keep my mouth shut and watch them kill their steaks.”
Along with other culinary experts, Niemi offers a series of summer grilling classes, including chicken, vegetables, fish and seafood. Chicken is on deck next on July 19. Here is the complete class schedule.
For those interested in meat and fire, City Roots will be hosting Bonivoche on Saturday. Niemi is a fan. “Bovinoche is the most exciting outdoor cooking event in the state. It’s similar to the asados of Brazil and Argentina, with whole animals cooked over open fires. In addition to being a feast, it’s a visual feast. It’s also a blast to work with Jeff “Rhino” Bannister and the gaggle of local chefs who join in."
